WOW! Soaked Tiger Nuts English Muffins
A friend of Tiger Nuts USA Erin Goodin of "The Buttery Palace" has created a sensational "Soaked Tiger Nuts English Muffin" recipe, using our Premium Organic Tiger Nuts Flour, and boy does this look good.
Because it’s January, it’s super common for people to resolve to lose weight. There are thousands of different diets and strategies to try when it comes to losing weight. I recently listened to this podcast by Dr. Cowan M.D. on the subject of losing weight. He made some really wonderful points, but his overall theme was that a person should not focus on losing weight as a goal, but on getting healthier. If a person strives to get healthy, their weight will level off at a healthy number. Dr. Cowan advocates eating a Weston A. Price type diet. He specifically points out that the healthiest thing we can do for our bodies is to eat a balanced diet. This includes:
- Fat
- Protein
- Carbohydrates
This makes so much sense to me. I’ve always been skeptical that fad diets such as the Paleo diet and the Ketogenic diet, which are both extremely low carb, could be good for you long term. Sure, they can provide great benefits and even healing in the short term, but long term they can lead to deficiencies in the body. The paleo diet specifically can lead to a vitamin A and D deficiency, which can cause serious health problems.
Eating Carbohydrates is a GOOD thing!
Dr. Cowan specifically points out that eating carbohydrates can be GOOD for you. Yup, that’s right; they are actually beneficial for your body, specifically your adrenal glands. The adrenals need carbohydrates to function properly. So if you go on a low carbohydrate diet, initially you might get an energy boost, but if sustained long term, your adrenals will eventually become exhausted.
Most carbohydrates come in the form of grains and tubers. They can also be found in fruits and sugars. One of the reasons fad diets have you stay away from carbohydrates is that they can tend to spike your blood sugar, and it’s harder for your body to feel full while eating them, so you end up overeating. Your body also views them as potential energy and therefore stores them away as fat for a later date.
Eating soaked grain is better for your gut!
When grains and tubers are fermented or soaked, they become much more digestible for our bodies. The bacteria in the soaking medium, usually lactobacillus essentially turns the carbohydrates into lactic acid. Lactic acid is easy on the gut, which is a good thing!
These Soaked Gluten Free English muffins are highly nutritious and easy to digest! They’re a great way to add properly prepared carbohydrates into your diet! They are soaked in buttermilk for 12 to 24 hours before they’re cooked. The enzymes in the buttermilk help to break down the anti-nutrients and phytic acid contained in both the rice flour and the tigernut flour.
I’ve been making a similar English muffin for years, but with yeast and flour that wasn’t fermented. They were also mainly made with a combination of potato and tapioca starch. These are two ingredients that are definitely not my favorite.
A bit on Tigernut flour…
Tigernut flour is expensive but it’s well worth it. The Tigernuts give the muffins a wonderful taste. Tigernuts are not nuts at all, but tubers. They are considered to be hypoallergenic, which is way cool. My husband, who cannot eat tree nuts, doesn’t have a problem with the tigernuts at all. But they MUST be soaked before they are consumed. They are high in resistant starch, so they’re a pre-biotic food, which they say is a good thing. Tigernuts are also considered to be grain free, so if you’re paying attention to that it’s a great alternative ingredient. They’re also high in:
- Iron
- Phosphorus
- Manganese
- Magnesium
- Thiamin
- Dietary fiber
I’ve read that the actual tuber is really fun and crunchy to eat. I’ve never bought them whole, only in the flour form. I’ve read claims that you can replace all-purpose flour with tigernut flour 1:1. I have NOT found this to be true. I have found that flour is needed or the baked good turns out crumbly and very gritty.
Most recipes I’ve seen online for Tigernut flour are pancakes. I’ve tried several of them, they mostly come out gritty. Although this recipe isn’t grain free it is highly nutritious.
These muffins are highly nutritious and easy to make. If you don’t want to risk spending the money on tigernut flour, don’t worry, you can follow the recipe exactly substituting tapioca starch. This will yield a wonderful product but it won’t be as highly nutritious as the other.
You will need English muffin rings to make these.

Here are step by step instructions, with pictures:
Mix the white rice flour, tigernut flour, guar gum and buttermilk together. Cover and let sit on the counter for 24 hours.
Grease 8 English muffin rings. And divide the batter evenly among the rings.
Turn griddle on to 200 degrees Fahrenheit and cook for approximately 15 min.
Flip and cook for an additional 15 minutes.
Let cook COMPLETELY before serving.
Top with butter or jam and enjoy!
- 1 1/3 cup white rice flour
- 2/3 cup tigernut flour
- 2 cups cultured buttermilk
- 1 tsp Guar Gum see notes for substiutions
- 3/4 tsp baking soda
- 1 tsp sea salt
- 1/2 tbsp raw honey
- 2 tbsp softened butter

Mix the white rice flour, tigernut flour, guar gum and buttermilk together. Cover and let sit on the counter for 24 hours.

Add the baking soda, sea salt, honey and softened butter. Mix thoroughly.

Let cook COMPLETELY before serving. Top with butter or jam and enjoy!
- You do need English Muffin Rings to make these. I've seen people fashion them out of tin foil, but seriously just buy them! You'll be so glad you did. These have been worth their weight in gold in my kitchen. I use them every week. I've had trouble finding them anywhere but online. I like the Norpro ones because they are stainless steel.
- I use Tiger Nuts Flour. I know there are many kinds of flour to choose from. This is the only kind I have ever used, it seems to work well!
- If you don't have a griddle, you can use a frying pan. You just have to be more careful about burning. Alternately you can bake the English Muffins in the oven, but this delivers an inferior muffin for sure!
- I have successfully subbed 1 tablespoon of gelatin for the Guar gum; however, this does make the bread crumbly.
