English Muffins using Tiger Nuts Flour

A friend of Tiger Nuts USA, Erin Goodin of "The Buttery Palace" has created a sensational "Soaked Tiger Nuts English Muffin" recipe, using our Premium Organic Tiger Nuts Flour,  and boy does this look good.

 

Soaked Tiger Nuts English Muffins
Soaked gluten-free Tiger Nuts English muffins. These make breakfast great!

Ingredients

Instructions

Step One: Soaking

  1. Mix the white rice flour, tigernut flour, guar gum and buttermilk together. Cover and let sit on the counter for 24 hours.
Step Two: Cooking
  1. Add the baking soda, sea salt, honey and softened butter. Mix thoroughly.
  2. Grease 8 English muffin rings. And divide the batter evenly among the rings.
  3. Turn griddle on to 200 degrees Fahrenheit and cook for approximately 15 min.
  4. Flip and cook for an additional 15 minutes.
  5. Let cook COMPLETELY before serving. Top with butter or jam and enjoy!
RECIPE NOTES
  • You do need English Muffin Rings to make these. I've seen people fashion them out of tin foil, but seriously just buy them! You'll be so glad you did. These have been worth their weight in gold in my kitchen. I use them every week. I've had trouble finding them anywhere but online. I like the Norpro ones because they are stainless steel.
  • I use Tiger Nuts Flour. I know there are many kinds of flour to choose from. This is the only kind I have ever used, it seems to work well!
  • If you don't have a griddle, you can use a frying pan. You just have to be more careful about burning. Alternately you can bake the English Muffins in the oven, but this delivers an inferior muffin for sure!
  • I have successfully subbed 1 tablespoon of gelatin for the Guar gum; however, this does make the bread crumbly.
