Gluten Free Tiger Nuts Crackers

It's hard not to fall in love with these gluten-free crackers. You'd never know they were made from scratch. They can be served with cheese, fruit, spreads, veggies, pickles – even tuna or chicken salad, smoked oysters or mussels!

Prep Time: 20 minutes.
Cool Time: 30 minutes – overnight
Bake Time: 8 – 10 minutes.
Yield: 48 crackers

Ingredients:

2 cups tiger nuts flour
3/4 cup arrowroot flour
3/4 tsp salt
2 tsp baking powder
1/6 cup tiger nuts oil
1/6 cup coconut oil

Instructions:

  • Combine dry ingredients to a food processor or mix by hand thoroughly.
  • Add wet ingredients to combined dry ingredients, in food processor & pulse to mix. [The texture should be that of wet sand that can be squeezed for form a loose ball. If needed, pulse in 1 tbsp coconut oil, at a time, to achieve desired texture.]
  • Lightly flour work surface, and pull dough together, kneading until well combined into a ball or flatten into a disc shape.
  • Place dough in a bowl & cover with plastic wrap. Chill dough for 30 minutes up to overnight, before forming into crackers.
  • Slice disc into equal-sized quarters. Then, slice each quarter into 3 equal pieces. Lightly flour work surface and roll each piece into a ball put in bowl cover with plastic wrap & chill an additional 20-30 minutes.
  • Lightly flour work surface, and slice each ball into 4 equal pieces, forming balls with each.
  • Prepare two sheets of plastic to press dough between, when forming crackers. Lightly flour each piece of plastic, on flat sides facing each other. Roll balls of dough, at least 3 inches apart, between floured plastic sheets.

    Use a flat dish or baking pan, to press crackers to about 1/4-inch thickness.
  • Preheat oven to 400 degrees F.
  • Prepare baking sheets with parchment or baking mats.
  • Gently, transfer pressed rounds to baking sheets, at least 1 inch apart.
  • Bake on 400 degrees F, for 8-10 minutes, or until golden brown around edges.
  • Remove from oven & leave on baking sheets for 2-3 min, before gently moving to a cooling rack, to cool completely, before serving.
