These healthy baked breakfast taquitos are great to have in the fridge for rushed mornings.

What You’ll Need:
- 1 potato
- 8 tortillas
- 2 jalapenos
- ½ tsp. chili powder
- 6 eggs
- ½ cup ham (or sausage)
- ¼ white onion
- ½ cup cheddar or Monterey Jack Cheese
- 2-3 tbsp. Tiger Nuts Cold Pressed Extra Virgin Oil
Method:
- Finely chop your potato and add into a large bowl with ½ tsp. chili powder, salt and pepper.
- Cover your bowl and shake to coat.
- Preheat oven to 400F.
- Transfer potatoes into a baking sheet lined with parchment paper and bake for 15-20 minutes.
- Meanwhile, chop up the jalapenos, onion, ham and cheese.
- Add 2-3 tbsp. Tiger Nuts Cold Pressed Extra Virgin Oil into a nonstick pan and sauté the onion and jalapenos for a few minutes.
- Add in the ham; season with salt and pepper. Next, add the eggs and cook until slightly underdone.
- Slightly warm up your tortillas so they are easy to handle.
- Fill each tortilla with potatoes, ham and egg mixture and finally the cheese.
- Roll them tight and place on a lined baking sheet.
- Brush lightly with oil and bake for 12-15 minutes. They will be done when the edges start turning a bit dark.
- Serve with hot sauce.
