"Oat-free!" Pear-Blueberry Crisp with Tiger Nuts Flour and Sliced Tiger Nuts

Ever wonder if you can make a fruit crisp without the oats? You can!  Here’s a delicious Pear & blueberry Crisp recipe using Tiger Nuts Flour and Sliced Tiger Nuts for a gluten-free, nutty alternative to the classic dish. The Tiger Nuts provide a naturally sweet, slightly chewy texture that pairs beautifully with the tender Pear and Blueberries.

Oat-free, nut-free and delicious with bubbling fruit and crunchy topping.

 

Ingredients:

For the Pear Blueberry Filling:

  • 2 medium Pears (peeled, cored, and diced)
  • 2 cups of Blueberries
  • 2 tbsp lemon juice
  • 1 tsp cinnamon
  • ¼ tsp ground nutmeg
  • 2 tbsp brown sugar or brown sugar substitute
  • 1 tsp vanilla extract
  • 1 tbsp arrowroot powder or cornstarch (optional, for thickening)

For the Crisp Topping:

  • 2 tbsp Tiger Nuts Flour
  • ½ cup (50g) Sliced Tiger Nuts
  • ⅓ cup (75g) brown sugar or brown sugar substitute (Splenda, stevia, coconut sugar etc.)
  • ¼ cup (60g) melted butter
  • 1 tsp cinnamon
  • Pinch of salt

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish or a similar-sized oven-safe dish.
  2. Prepare the Pear and Blueberries: In a large bowl, toss the diced Pear and Blueberries with lemon juice, cinnamon, nutmeg, coconut sugar, vanilla extract, and arrowroot powder (if using). Mix well to coat evenly. Spread the Pear Blueberry mixture evenly in the prepared baking dish.
  3. Make the crisp topping:
    • In a medium bowl, combine the Tiger Nuts Flour, Sliced Tiger Nuts, sugar substitute (Splenda, coconut sugar or real sugar), cinnamon, and salt.
    • Pour the melted coconut oil (or butter) over the mixture and stir until the ingredients are well combined and form a crumbly texture.
  4. Assemble the crisp: Sprinkle the crisp topping evenly over the Pear Blueberry mixture, making sure to cover them completely.
  5. Bake: Place the dish in the oven and bake for 35–40 minutes, or until the topping is golden brown and the Pear Blueberries are bubbly and tender. If the top begins to brown too quickly, cover it loosely with aluminum foil halfway through baking.
  6. Cool and serve: Allow the Pear Blueberry crisp to cool for about 10 minutes before serving. Enjoy it warm, optionally topped with vanilla ice cream or a dollop of whipped cream.
