Green Beans "Tiger Nut-dine"

Ingredients:

1 lb (450g) fresh green beans, ends trimmed

2 tablespoons Tiger Nuts Oil (or olive oil)

1/4 cup sliced Tiger Nuts

2 cloves garlic, minced

Zest of 1 lemon

2 tablespoons lemon juice

Salt and pepper, to taste

Optional: 1 tablespoon chopped fresh parsley for garnish

Instructions:

  1. Cook the Green Beans:  Bring a large pot of salted water to a boil. Add the green beans and cook for 3-5 minutes, or until they are bright green and tender but still crisp. Drain and immediately plunge them into ice water to stop the cooking process. Drain again and set aside.
  2. Toast the Sliced Tiger Nuts: In a large skillet, heat 1 tablespoon of olive oil or butter over medium heat. Add the sliced Tiger Nuts and toast them, stirring frequently, until they are golden and fragrant. This should take about 2-3 minutes. Be careful not to burn them. Remove the Tiger Nuts from the skillet and set them aside.
  3. Sauté the Green Beans: In the same skillet, add the remaining tablespoon of olive oil or butter. Add the minced garlic and sauté for about 30 seconds, or until fragrant but not browned. Add the blanched green beans, lemon zest, and lemon juice to the skillet. Toss to coat the green beans in the garlic-lemon mixture. Season with salt and pepper to taste.
  4. Combine and Serve:  Once the green beans are heated through, add the toasted sliced Tiger Nuts and toss gently to combine. Taste and adjust seasoning if necessary.
  5. Garnish and Serve:  Transfer the green beans "Tiger Nut-dine" to a serving platter. If using, sprinkle with chopped fresh parsley for a touch of color. Serve immediately.

This version of Green Beans Almondine, or "Tiger Nut-dine," maintains the essence of the original dish while introducing the unique texture and flavor of Tiger Nuts.
