Satisfy your Sweet Tooth with this Tiger Nuts and Coffee Mousse

Craving something sweet? You need to try out this nut and coffee mousse! It’s an easy dessert idea for a party or family dinner as well.

What You’ll Need:

- ½ tsp. vanilla extract
- ¼ cup roasted nut butter
- 1 tsp. instant coffee
- ¼ cup coconut sugar
- 1 package (7 oz. or 200g) Silken tofu (drained)
- 1 tbsp. maple syrup
- 1 ripe banana (sliced)
- ¼ cup roasted Supreme Peeled Tiger Nuts (roughly chopped)

Method: 

  1. Make the nut butter by preheating your oven to 400F and spreading the nuts in a roasting dish. Roast for 10 minutes. Add the nuts into a food processor along with salt and process until smooth. This will probably take around 10 minutes and you will need to stop in between a few times to scrape the sides.
  2. To make the mousse, combine all the ingredients together in a blender until smooth. Transfer to a bowl and refrigerate for at least 1 hour.
  3. When it’s time to serve, transfer to small glasses and top with sliced banana and leftover roasted nuts.

You are Sure to Love These Roasted Hazelnut Cookies with Tiger Nuts!

These roasted nut cookies are perfect to make anytime!

Prep Time: 1 hour 20 minutes
Cook Time: 20 minutes
Total Time: 1 hour 40 minutes

What You’ll Need:

- 1/3 cup coconut oil
- ½ cup Raw Organic Tiger Nuts
- Extranuts (for garnish)
- ¾ cup whole wheat flour
- 1 tsp. cinnamon
- 1/3 cup brown sugar

Method: 

  1. Spread the Tiger nuts on a baking sheet and let them roast under the oven’s broiler for a few minutes. Once the skin starts to peel off and they darken, take out of the oven and let them cook. When they have cooled down, rub them between your hands to get rid of the loose skin. It’s okay if you don’t get all of them off.
  2. Add the brown sugar and nuts in a food processor and pulse until you have a sand like consistency.
  3. Add the remaining ingredients and pulse until everything is combined. Form dough from the mixture. If it’s too crumbly, you can add a bit of cold water. Roll the dough into a cylinder, cover with plastic wrap and refrigerate for at least an hour.
  4. Preheat oven to 350F.
  5. Take the dough out from the oven and let it warm up a bit before slicing ½ inch thick rounds. Place the cookies on a baking sheet lined with parchment paper and bake for 12-15 minutes.
  6. Cool and garnish with chopped nuts.
  7. Enjoy!

Try these Mouthwatering Low Carb Blueberry Ricotta Pancakes, Man they look and taste good!

These pancakes will become a favorite of your whole family!

This recipe will make 5 terrific servings.

What You’ll Need:

- 1 cup Premium Organic Tiger Nuts flour
- 3 large eggs
- 1 tsp. baking powder
- ¼ cup blueberries
- ¾ cup ricotta
- ½ cup golden flaxseed meal
- ½ tsp. vanilla extract
- ¼ tsp. stevia powder
- ¼ tsp. salt
- ¼ cup unsweetened vanilla almond milk


Method: 

  1. Blend the eggs, vanilla extract, unsweetened almond milk and ricotta together. Next, place a skillet over medium heat.
  2. In a separate bowl, mix the golden flaxseed meal, flour, baking powder, stevia and salt together.
  3. Add all the dry ingredients slowly into the blender and blend until a smooth batter is formed. 
  4. Add butter into the preheated skillet and wait for it to melt. Once that happens, pour your pancake batter into the skillet and flip when one side turns golden brown around the edges. For exact measurements, you can do 2 tbsp. of batter per pancake.
  5. Serve with your favorite sugar-free syrup and berries on top.
