Have a taste of our delicious Spanish Frittata, it is seriously good!

Filled with the taste of spinach, mushroom and onion; you will certainly enjoy this Spanish frittata for breakfast.

Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes
Serves: 4-6

What You’ll Need:

- 12 large organic eggs
- ½ cup sautéed mushrooms
- ½ tsp. sea salt, more to taste
- 1 small red onion (finely chopped)
- 1 cup spinach
- 2 tbsp. Premium Organic extra virgin olive oil
- ½ cup coconut milk

Method: 

  1. Preheat oven to 375F.
  2. Heat the oil in a pan over medium-high heat and sauté the onions for 3 minutes, until translucent. Add the mushrooms and sauté until soft. Next, add the spinach and stir until it welts. Take the pan off the heat, transfer veggies into a plate and set aside.
  3. Turn the heat down to low and add a bit more coconut oil. Crack your eggs into the same skillet and cook them on medium-low for about 5 minutes. Use a spatula to spread the eggs to the center from the edges. Once the eggs are no longer runny, top them off with the vegetable mixture.
  4. Chuck inside the oven for 5 minutes or until set and golden brown. 
  5. Once done, take out of the oven and place a plate over the pan. Hold both the pan and the plate and then flip the pan so that the frittata safely drops onto the plate. Now, slide it back into the pan and place back into the oven for 3-4 minutes so that the other side cooks. 
  6. Serve.

WOW this Vegan Banana Bread is Healthy and tastes Great!

You may have a hard time believing it, but this banana bread takes only 10 minutes to put together. Have some overripe bananas in the fridge? Make delicious vegan banana bread!

Prep Time: 10 minutes
Cook Time: 50 minutes
Total Time: 60 minutes

What You’ll Need:

Dry Ingredients:
- ½ tsp. baking powder
- ½ cup rolled oats
- ¼ cup + 2 tbsp. coconut sugar
- Sliced bananas and chopped walnuts for topping (optional)
- ½ tsp. fine sea salt
- 1 tsp. baking soda
- 1 ½ cups Premium Organic Tiger Nuts Flour

Wet Ingredients:
- 1/3 cup almond or coconut milk
- 2 tsp. pure vanilla extract
- 1 1/3 cups mashed ripe bananas (around 3 large or 4 medium bananas)
- 2 tbsp. pure maple syrup
- 2 tbsp. ground flaxseed
- 1/3 cup coconut oil (melted)

Method:

  1. Preheat oven to 350F. Take a 9x5 inch loaf pan with oil and set aside.
  2. Mash your bananas in a large bowl. You should have 1 1/3 cups.
  3. Add in all the wet ingredients with the mashed bananas and mix well.
  4. Next, stir in the dry ingredients one by one. You can stop stirring when all the flour patches are gone from the bottom on the bowl.
  5. Transfer the dough into a loaf pan and spread it out evenly. Add the toppings and press them gently into the dough. 
  6. Bake uncovered for 4-55 minutes. You will be done when the loaf is lightly golden and firm on the top.
  7. Place on a cooling rack for 30 minutes and then gently run the knife around the edges of the pan to loosen the bread. Remove from pan and allow it to completely cool before slicing.
  8. Slice and enjoy!

Try these Healthy and Delicious Turmeric Carrot Muffins

These muffins will remind you sunshine and happy thoughts. The flavor of carrots, chia seeds, fresh ginger and turmeric really makes an amazing and healthy combination. Who ever said muffins can’t be healthy?

Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes

What You’ll Need:

Wet Ingredients:

- ¼ cup shredded coconut
- 1-2 tbsp. brown sugar
- 1/3 cup maple syrup
- 2-3 tsp. lemon juice
- 1 cup chopped or grated carrots
- 1 tsp. vanilla extract
- 1 tbsp. oil (optional)
- ½ cup + ¼ cup almond milk
- ½ - 1 tsp. turmeric
- Chia seeds and coconut for topping
- ½ inch. Peeled ginger

Dry Ingredients:

- ¼ tsp. salt - 3-4 tbsp. chopped dates or raisins
- 2 tsp. baking powder
- 1 ½ cup Premium Organic Tiger Nuts Flour
- ¼ tsp. baking soda
- 2-3 tbsp. chia seeds
- 1 tsp. spice (a combo of cinnamon, nutmeg and cardamom or as per your
preference)

Method: 
  1. Mix in all the dry ingredients in a bowl. 
  2. Preheat the oven to 365F and line a muffin pan and set aside. 
  3. Combine all the wet ingredients together in a blender (use only ½ cup almond milk) until everything in incorporated. Transfer to the bowl with the dry ingredients. Rinse the blender with ¼ cup almond milk and add it into the same bowl. Mix everything together until combined. If you feel that the mixture is too runny, add in a few more tbsp. flour. 
  4. Scoop the batter into the muffin pan and garnish with coconut and chia seeds. 
  5. Bake for 25-28 minutes and allow to cool for 5 minutes before serving. You can store them for up to 5 days in the refrigerator.
